Mango and Passionfruit Chia Puddings

These Mango and Passionfruit Chia Puddings are so good that I usually make enough for the next 3-4 days. Great school or work lunch snack – packed full of protein, good fats and fibre – a great immune booster too!

  • • ¾ cup water
  • • ¼ cup 100% coconut cream (I use the green AYAM brand)
  • • ½ tsp cinnamon
  • • 1 tsp vanilla bean paste
  • • ¼ cup fresh or frozen mango
  • • 1 passionfruit
  • • ¼ cup chia seeds (I used the white ones this time)

Blend all ingredients except the chia seeds. Pour mixture into a bowl and add the chia seeds. Stir for around 5 minutes to allow the chia to form a gel without clumps. Leave on the bench, stirring occasionally for around 20 minutes. Pour the mixture into small ramekins or small glass jars and pop in the fridge for at least an hour.
